Ten thousand years ago the human race entered a golden period. Known as the ‘Agricultural Revolution’, it saw the development of crops and the domestication of wild animals. With the ability to grow and farm food, humans made a quantum leap forward and grew from small tribes of nomadic hunter-gatherers to city dwellers. Language, culture, art, music and all other aspects of sophisticated civilisation flourished. But the Agricultural Revolution was just the first step along a road that has seen our diet constantly evolve. Today, the animals and plants we farm and eat bear little resemblance to their ancestors. But they are crucial to what we eat today.
