Jerusalem artichoke tubers. The edible tubers (bulbous structures next to the roots) grow in the ground. The Jerusalum artichoke plant is a member of the sunflower family. This artichoke's common name is a corruption of the Italian for sunflower (girasole). The Jerusalum artichoke is highly nutritious.
