Potato starch is an important industrial resource. It is used in the food and textile industries, Fermentation of starch produces alcohol: ethanol, or ethyl alcohol. Potato starch is one of the 'root starches' (another is arrowroot starch) which in contrast to cereal grain starches do not have an off-flavor, gelatinize at a lower temperature and form thicker gels.
