Alonzo Hollister, a member of the Society of Shakers, and his vacuum pan evaporator. This invention was used to distill herbs in a vacuum at very low temperatures, thereby preserving their medicinal qualities. It was this machine that inspired Gail Borden to invent evaporated milk.
