Yeast cells. Light micrograph of cells of baker's yeast (Saccharomyces cerevisiae), used in the manufacture of bread. The same yeast is used for the fermentation of alcoholic drinks. Yeast is a single-celled fungus. It ferments sugar, producing alcohol and carbon dioxide. The carbon dioxide produced causes bread to rise and lighten. Magnification: x250 at 35mm size.
