Infected apple. Coloured scanning electron micrograph (SEM) of unidentified yeast (blue) and mould fungi (green) in a crack on the surface of an apple (orange). Yeast are single-celled fungi. Fungal spores that have landed on the exposed flesh have germinated, thriving in its sugary environment. Yeast ferments sugars, producing alcohol and carbon dioxide.
