Chicory flowers (Cichorium intybus). This plant is native to Eurasia but has been introduced throughout the world. It is a hardy plant with deep roots. The roots can be dried and ground and used as a coffee substitute, while the young leaves are often eaten fresh in salads. It flowers in summer and early autumn.
