An assortment of pulses. Pulses are crops such as beans and lentils. They are grown primarily for their seeds, which provide a concentrated source of vegetable protein. They make a vital contribution to the human diet in poor countries where meat is scarce. Pulses also play a useful role in crop rotation as they help to raise soil nitrogen levels as well as acting as break crops.
