Ginger. An assortment of rhizomes (underground stems) of cultivated ginger, Zingiber officinale. Ginger originates from Asia and is the most widely used spice in Chinese cookery; it was one of the earliest oriental spices brought to Europe. The dried rhizomes are esteemed for their flavour, pungency and aroma. For culinary purposes ginger is used in biscuits, puddings, soups and pickles; ginger is a frequent constituent of curry powder; it is also used in the production of ginger beer, ginger ale and ginger wine.
