Lentils. Dried lentils, a type of pulse which is used as food. Pulses come from plants that can use the nitrogen in air to make proteins. Because of this they are very high in protein, and form an important part of the diet of people who eat little or no meat. Pulses are also rich in dietary fibre, unlike protein-rich animal products.
