Rice plant. Blades of rice plant (Oryza sativa) seen in a hand. Cultivated rice is an annual grass which is derived from a wild Asiatic species. In the form seen here, it is known as paddy or rough rice and is similar in structure to wheat grain. Milling rough rice involves removing the outer coverings, seed coats and embryo using revolving stones, fans and rubbing. The remaining grain is then scoured and polished by rubbing on leather surfaces. The polished grain is finally given a coat of glucose and talc and is ready for market.
