Preserving sugar. Macrophotograph of crystals of preserving sugar (sucrose) with smaller granulated household sugar crystals also seen. Sugar is extracted from sugar cane or sugar beet. Preserving sugar is used mainly in the preparation of fruit: once boiled with these large sugar crystals the preserved fruit can be placed in long-term storage.
