Vitamin C-rich foods. Selection of vitamin C-rich foods presented in test tubes to depict the modern scientific techniques of food processing. Vitamin C (ascorbic acid) is necessary for healthy bones, teeth, gums, ligaments, blood vessels and nerves. It is needed for the body's enzymes and for the maintenance of a healthy immune system. The foods shown are rich natural sources of vitamin C. They are (from left) orange, parsley, grapefruit, kiwifruit, strawberry and lemon. However, the modern diet now relies much less on the natural sources of this vitamin. Instead vitamin C is manufactured in the laboratory and added to processed foods.
