Pulses. Selection of different pulses presented in test tubes to depict the modern scientific techniques of food processing. They include peas (two tubes at left), beans (middle three tubes) and lentils (at right). They are a very nutritious food, being low in fat and a rich source of carbohydrate, minerals, protein and fibre. However, the modern diet now relies much less on natural nutrient sources such as pulses. Instead many nutrients are now manufactured in the laboratory and used to make processed foods.
