Dairy products. A selection of dairy products. These are all derived from milk. They include cheese (lower left), yoghurt (centre left), milk (upper left) and butter (lower right). Dairy products are rich in vitamins and calcium and phosphorous, minerals essential for a healthy life. They are also high in cholesterol and fat, however, which can lead to increased risk of a heart attack or stroke. Cheese is made by using bacterial action to separate the solid part of milk from the liquid part. Butter is made by skimming the cream off milk and then churning this fat until it solidifies.
