Cheese assortment. Assortment of cheeses on a glass plate together with various fruit, a glass of red wine and nuts (lower left). The cheeses seen are brie (white, lower right), stilton (yellow with blue mould), emmentaler (yellow, with holes) and cheddar (yellow, above Brie). Cheese is made by using bacterial action to separate the solid part of milk from the liquid part. Usually cows' or goats' milk is used. Cheese is rich in vitamins, calcium and phosphorous. It is also, however, high in cholesterol and fat. The fruit seen here are grapes (upper left), kiwi fruit (green sliced), apple, orange and pomegranites (red with yellow seeds).
