Eggs and dairy products are rich in vitamins and the minerals calcium and phosphorous. They are also high in cholesterol and fat, however, which can lead to increased risk of a heart attack or stroke. Cheese is made by using bacterial action to separate the solid part of milk from the liquid part. Butter is made by skimming the cream off milk and then churning this fat until it solidifies.
