Egg and cholesterol. Cracked egg as a symbol of cholesterol rich food. Although a good source of protein, eggs are high in cholesterol, a near insoluble sterol (fat) found in animal fat and tissue. A high intake of dietary cholesterol is associated with atheroma, the blockage of arteries by fatty plaques which may cause restricted blood circulation and lead to stroke or heart attack.
