Baby turnips (Brassica rapa). Small, tender varieties of this root vegetable are grown for the table. The skin colours where they break the surface of the soil but the flesh is white and crisp. Larger, coarser types are grown for livestock food. This tap root originally evolved so the plant could store nutrients in times of drought or winter conditions.
