Greying hair. Strands of grey on a woman's head. Greying can occur due to stress or as part of the aging process. Hair colour is determined by the amount of melanin pigment in the hair shaft, which is controlled by the pituitary gland in the brain. If the cells receive less or no pigment, then the cortex of each hair becomes transparent and the hair looks grey or white.
