Sturgeon fish. Fisherman holding a sturgeon (Acipenser sp.) fish. The sturgeon is a commercially fished species that was once abundant in the Atlantic Ocean and along the Mediterranean coast. Due to over fishing and the collection of its eggs (roe), that are eaten as a delicacy (caviar), it is now classed as an endangered species. Sturgeons are now reared in fish farms.
