Food additives research. Researcher smelling food vapours as they come out from a metal tube (at lower left). The vapours have been extracted from food and separated from each other into individual chemicals. Of the hundreds of chemicals that can be extracted from food, only a few are responsible for its smell. The smell of each of the extracted chemicals will be compared with the aroma of the original food to see if they are a component of it.
