Bread manufacture. Baker standing beside a vat of sour dough in a bread factory. Dough is a mixture of flour, water or milk and usually some sugar, salt and fat. If light, porous, leavened bread is to be made, then yeast or baking powder is added as well. These produce carbon dioxide gas which causes tiny bubbles to appear in the dough mixture. The bread is baked, inspected and then distributed to customers.
