Bread manufacture. Baker placing the ingredients of bread dough into a mixing or kneading machine. At lower right, kneaded dough has been shaped into loaves. Dough is a mixture of flour, water or milk and usually some sugar, salt and fat. If light, porous, leavened bread is to be made, then yeast or baking powder is added as well. These produce carbon dioxide gas which causes tiny bubbles to appear in the dough mixture. The dough is baked into bread, inspected and then distributed to customers.
