Kuwaiti bakery. Baker making traditional bread in Kuwait City, Kuwait. The bread is called nan-e- barbari, and is a Persian-style flat bread that accompanies every meal in Kuwait. It is an unleavened bread made with hard wheat and baked in a tannur, a traditional Iranian clay oven (left). The inside walls of the tannur are hardened with a protective coating of mustard oil, yogurt, ground spinach, and raw sugar. The traditional tool seen here at the front of the oven is used to place the bread in the oven.
