Wine bottle air extractor pump. This device is used to evacuate the air above the wine in an opened bottle, creating a partial vacuum that preserves the wine for longer. The partial vacuum slows the microbial reaction and oxidation that eventually spoils the wine, producing a vinegar taste. The microbes present in the wine turn the alcohol to acetic acid in the presence of the oxygen in the air. This process doesn't occur when the bottle is sealed with a cork.
