Molecular model of tartaric acid. Atoms are represented as spheres and are colour-coded: carbon (black), hydrogen (white), oxygen (red). The bonds between the atoms are represented by rods, where two rods shows a double bond. Tartaric acid is a white crystalline organic acid that occurs naturally in many plants, particularly grapes and bananas, and is one of the main acids found in wine. Tartaric acid is added to food to give a sour taste, and is used as an antioxidant. Salts of tartaric acid are known as tartrates and include Cream of Tartar (potassium bitartrate) which is commonly combined with baking soda (sodium bicarbonate) to form baking powder.
