Polarised light micrograph of crystals of D- galactose. This is a simple sugar, a constituent of many polysaccharides found in pectins, gums and mucilages. It is also known as cerebrose, or brain sugar because it is a constituent of certain glycolipids found in quantity in brain and nervous tissue. Together with glucose it forms lactose, the sugar contained in human and other mammalian milk. Magnification: x61 at 35mm size.
