Clams before and after cleansing. The clam held in the person's right hand has undergone a 48 hour cleansing process, known as depuration. Before this process it was the same colour as the other clams. During depuration the clams are bathed in a continual flow of disinfected seawater. The clams syphon this water, resulting in them purging any contaminants. After 48 hours samples from the clams are tested for contamination and if clean are passed for human consumption.
