Differential interference contrast (DIC) light micrograph of a water-in-oil-in-water (W/O/W) emulsion. Water is pink, while oil is clear. Such emulsions are used in the food and cosmetic industries. They allow the fat content of foods to be reduced without effecting the texture, and produce a less oily finish on cosmetics.
