Elastase molecule and pancreas. Computer model of elastase, an enzyme produced in the pancreas (orange). Elastase catalyses the hydrolysis of elastin. It is a compact globular protein consisting of a single polypeptide chain of 240 amino acids, which are cross-linked by 4 disulphide bridges. The pancreas is a gland that lies behind the stomach. It secretes pancreatic juice that contains digestive enzymes & hormones.
