Caption

Close-up timelapse footage of a piece of red cabbage (Brassica oleracea) in a solution of alkaline sodium hydroxide, showing the change in colour. The anthocyanin pigment chemical in this plant acts as a natural acid-base indicator, here seen to change colour to yellow in alkali. This clip has been sped up 40 times. See clip K004 5184 for the cabbage in an acid.
