Max Wallerstein (c.1875-1937), German-US chemist. In 1902, he and his brother Leo Wallerstein (c.1882-1958) founded Wallerstein Laboratories in New York, USA, to provide consultation services to the brewing industry. This included research into fermentation, as well as enzymes used in manufacturing and food industries.
