Vitamin C (fat-soluble). Colour Scanning Electron Micrograph of crystals of ascorbyl palmitate, the fat- soluble form of vitamin C. The water-soluble form is ascorbic acid. Vitamin C is essential for the activity of many human enzymes. It is needed for the growth and maintenance of healthy bones, gums, teeth, ligaments, and blood vessels. It is also involved in the production of neuro- transmitters and in the stimulation of the immune system against infections. The main dietary sources of vitamin C are citrus fruits and green vegetables. Deficiency of vitamin C leads to scurvy, with swollen bleeding gums and anaemia. Magnification: x840 at 6x7cm size.
