Vitamin B1. Polarised light micrograph of crystals of thiamine, also known as vitamin B1. In the body, thiamine is found as a pyrophosphate ester and is involved in many important processes as a co-enzyme. Deficiency of thiamine in the diet leads to a general atrophy of the central nervous system as in beri-beri. Good dietary sources of thiamine are yeast, eggs and cereal germ.
