Vitamin A. Molecular graphic of vitamin A. Atoms are colour-coded: carbon = pink, hydrogen = white, oxygen = red. Vitamin A is essential for normal growth, for bone and teeth formation, night vision and for protecting against infection. A fat- soluble compound, it is found in animal foods such as liver, fish-liver oil, eggs and dairy products. Carotene, from sources such as green vegetables and fruits, is converted into vitamin A in the liver. Vitamin A deficiency can lead to weight loss, growth problems, dry eye (xerophthalmia), which can result in blindness, and keratinisation.
