Insulin molecules. Animation of a molecular model of insulin. Insulin is a protein hormone which is produced in the pancreas by cells of the Islets of Langerhans. Its function is to regulate the metabolism of carbohydrates and fats through the assimilation of glucose from the blood into the skeletal muscles and fat tissue. Insufficient production of insulin leads to an accumulation of glucose in the blood, causing diabetes mellitus.
