Preparing palm sugar. Man pouring a syrup prepared from the sap of palm trees. The sap is collected and boiled for hours until the sugars crystallise in this syrup. The syrup is then cooled and poured into coconut halves where it solidifies into palm sugar. The sap is obtained from trees such as the Palmyra palm, the date palm or the sugar date palm.
