Polarised light micrograph of tartaric acid crystals. Many organic molecules are chiral, which means they exist in several forms that are mirror images of each other. However, in biology usually only one form exists. Such chiral molecules rotate polarized light resulting in colorful appearance between polarizing filters. Salts of tartaric acid (cream of tartar) form crystals found in aged wine.
