Genistein antioxidant molecule. Computer model of a molecule of genistein, a flavonoid extracted from soybeans and other legume vegetables. Atoms are represented as rods and are colour-coded: carbon (green), hydrogen (pink) and oxygen (red). Genistein has powerful antioxidant properties. It mops up some free radicals, prevents the production of others and also increases the activity of antioxidant enzymes. It may also have anticancer properties as individuals who eat a large amount of soy products have reduced incidences of breast, colon, endometrial and prostate cancers.
