Medical visualization of high levels of insulin causing weight gain. When you eat carbs, insulin promotes storage of fatty acids in your fat cells. If you eat too many carbs, you end up with too much insulin in your system. Insulin stops fat from breaking down, so they cannot be burned for energy. More fatty acids enter the cells, and they are not able to escape. This results in fat cell expansion and weight gain.
